Ice crystals in meat occur when air comes in contact with the meat. When meat is frozen there would be a couple of water molecules from the meat that would end up forming ice crystals. Generally, water molecules are found in the coldest places in your freezer. It is the loss of these water molecules that make the food dehydrated.
